Strawberries in Balsamic Vinegar


  • 2 cups strawberries sliced
  • 2 tbs balsamic vinegar
  • 3 tbs sugar
  • Combine all ingredients, let sit at room temperature for at least 1 hour. Add 1/2 ts fresh cracked black pepper, then serve over vanilla ice cream.



    Strawberry BBQ Sauce


  • 2 tbs maple syrup
  • 1 tbs brown sugar
  • 1 tbs worchestire sauce
  • 1 tbs molasses
  • 2 tbs chopped garlic
  • 1/4 cup cider vinegar
  • 1/2 cup ketchup
  • 2 ts mustard
  • 1 ts paprika
  • 1 ts pepper
  • 1/2 ts salt
  • 2 cups strawberries pureed
  • Blend well.



    Strawberry Asian Dipping Sauce


  • 1/2 cup strawberries pureed
  • 2 tbs rice vinegar
  • 1 tbs sesame oil
  • 1 tbs sugar
  • 2 ts fish sauce
  • 1/2 ts chili flakes
  • Blend well.



    Strawberry & Chicken Fresh Rolls


  • Sliced strawberries
  • Chicken breast cut in strips
  • Julienned cucumbers
  • Spinach
  • Fresh basil
  • Green onion strips
  • Rice paper
  • Dip rice paper in hot water, layer ingredients in center of rice paper. Fold bottom up, then fold in sides and roll.



    Strawberry Lemonade


  • 2 cups water
  • 3/4 cup sugar
  • 1 tablespoon grated lemon peel
  • 1 cup fresh lemon juice
  • 3 cups fresh or frozen strawberries
  • 2 cups club soda
  • Bring water and sugar to a boil. Reduce heat and simmer until sugar dissolves. Add lemon peel and lemon juice. Remove from heat, let cool completely then strain into pitcher. Puree strawberries and add to pitcher. Add club soda and serve.



    Fruit Salad


  • Fresh seasonal fruit:
  • Strawberries
  • Saskatoons
  • Grapes
  • Watermelon
  • Pineapple

  • Juice of 3 limes
  • Juice of 2 lemons
  • 3 tablespoons of grated lime peel
  • 3 tablespoons of sugar
  • Combine juice and sugar until sugar dissolves, add to fruit and refrigerate for 30 minutes. Serve in hollowed out pineapple or watermelon.



    Fruit Leather


  • 4 cups strawberries
  • 1 teaspoon lemon juice
  • 1 teaspoon honey
  • Puree until smooth. Spray cookie sheet with non-stick spray. Pour puree onto sheet, trying to avoid edges. Place in 150 degree oven (prop oven door open to allow moisture to escape) for 3-4 hours or until dry.

    *If edges get hard or you overcook, crumble for topping on ice cream or cereal.



    Strawberry Banana Smoothie


  • 2 cups strawberries
  • 1 frozen overripe banana
  • 1 cup yogurt any flavour
  • Blend and serve. Use leftover smoothie for fruitsicles!



    Strawberry Salsa


  • 1 ½ cups chopped strawberries
  • ½ cup chopped kiwi
  • ½ cup chopped cucumbers
  • ½ cup chopped red onion
  • 2 tbsp chopped seeded jalapeno
  • 1 tbsp chopped fresh cilantro or basil
  • 1 teas grated lime rind
  • 2 tbsp fresh lime juice
  • 1 tbsp orange juice
  • 1 tbsp honey
  • ¼ teas salt
  • Combine all ingredients and chill.



    Berry Pizza


    Prepare basic sugar cookie:

  • 2 ½ cups flour
  • 1 teas baking powder
  • ½ teas salt
  • 1 cup sugar
  • 2/3 cup butter or margarine
  • 2 eggs
  • 1 teas vanilla
  • Mix together, spread out on pizza pan. Bake at 375 for 8 – 10 mins. Let cool completely.

    Topping:

  • 250g package of cream cheese (soften in microwave)
  • 1 cup icing sugar
  • 1 teas vanilla
  • Mix well and spread over cookie. Add fresh sliced strawberries, Saskatoon berries or other seasonal fruit!



    Marshmallow Dip


  • 1 jar marshmallow cream
  • 250g package of cream cheese
  • Mix well and use as dip for fresh strawberries.



    Kahlua Sour Cream Dip


  • 1 cup sour cream
  • 2 tbsp brown sugar
  • 2 tbsp kahlua
  • Mix well and use as dip for fresh strawberries.



    Strawberry Chicken Salad


  • ¼ cup mayonnaise
  • ¼ cup plain non-fat yogurt
  • 2 tbsp sweet pickle, chopped
  • 1 tsp lime peel grated
  • 1 tsp salt
  • 1 tsp curry powder
  • 1 tbsp lime juice
  • 2 cups cooked chicken diced
  • 1 cup chopped celery
  • ¼ cup red onion, chopped
  • 2 cups strawberries, stemmed and sliced
  • Lettuce, sprouts, or spinach
  • In a large bowl, mix mayo, yogurt, pickles, lime peel, salt, curry powder and lime juice. Add celery, onion and chicken. Toss, cover and chill. Just before serving, wash and slice strawberries. Gently toss with mixture. Line a platter with lettuce, mound chicken mixture in center. Garnish with remaining whole strawberries. Also can be used in pita pockets or tortilla wraps with spinach or sprouts.
